Mirko Grillini is a Chef on a quest: each year he drives thousands of kilometres to teach his distinctive brand of Italian cooking classes in rural communities across Australia. Long ago Mirko discovered that the joy of cooking is in sharing the experience and has enthusiastically offered up his vast knowledge with thousands of men and women in regional towns and outback communities for over 10 years.

Fair Dinkum Italian is a new television series following Chef Mirko Grillini on an adventure-bound cookery trip through the regions of Australia made famous for their fine produce. While gathering local ingredients and meeting town residents Mirko is on a search to find participants for his cooking class. His students prepare Italian based culinary delights; fresh, warm breads, handmade pastas, wonderful flavours from simple, fresh ingredients with added secrets learned from his grandmother in Bologna, Italy.

With a passion for the Australian way of life, Mirko learns more as he is invited by his class members to share and understand life in the local community. Now Mirko is the student learning new outback skills like horse riding, fishing, stock and land management and a range of jobs, lifestyles and experiences that have forged the pioneering spirit in every character living in a tough but beautiful and diverse land that Mirko Grillini now calls his own.
